Chicken Cutlets

Ingredients 

2 large chicken breasts

2 large eggs

1 ¼ cups flour

¼ cup parmesan cheese grated

1 teaspoon garlic powder

1 teaspoon  cayenne powder

1 teaspoon onion powder

salt & pepper to taste

⅓ cup vegetable oil

Instructions 

  1. Freeze chicken breasts for about 20 minutes or so.
  2. Cut chicken breasts in half horizontally and pound to ¼" thickness.
  3. Combine flour,cayenne, onion powder, and garlic powder in a small shallow dish.
  4. Parmesan cheese in a separate bowl
  5. Whisk egg in a separate bowl. Dip chicken in egg, then flour mix, then egg again,  and then in the parmesan pressing to adhere.
  6. Preheat oil in a large skillet over medium heat. Gently add chicken and cook 2-3 minutes per side or until golden brown and chicken reaches 165°F.
