Ingredients
- 2 large eggs
- 1 ounce smoked salmon, chopped
- 2 teaspoons reduced-fat cream cheese
- 1 scallion, sliced
- 1 teaspoon capers, rinsed
Directions
- Lightly beat eggs in a small bowl until combined. Stir in smoked salmon, cream cheese, scallion and capers. Coat a small nonstick skillet with cooking spray and heat over medium. Add the egg mixture and cook, stirring often, until scrambled, about 3 minutes.
