In a Really BIG POT add in the beer and the Hot sausages. Simmer on Medium heat till sausages are browned and you have a caramel brown sauce. Add in Buffalo and Sriracha sauce. Be careful not to burn or blacken the sauce.

While the sausages are cooking, Dice/ cut up the onions, peppers , jalapenos , mushrooms and garlic.

Remove the Hot sausages to the cutting board. Set aside to cool, once cooled slice in half then slice into ¼ inch pieces.

Add onions to the big pot, simmer on medium heat with the lid off. This will help de-glaze the pot. Simmer till  onions are soft and most of the liquid from the onions have evaporated.

Add ground pork sausage. Combine with onions in the pot and cook till slightly browned.

Add in two shots of Worcester, add in jalapeños diced with the seeds. Cook for 5-10 min.

Add in diced peppers  and sliced raw mushrooms. Cook until soft and all the moisture is cooked off/ absorbed.

Add sliced hot sausages and stir.

Add in meatballs. Cook for 10-15 min to brown and warm.

Add in pasta sauce until the pot is almost full.  Please leave room for stirring.

Add 8 oz ( Roughly ¼ to ½ of the 16 oz kraft grated parmesan cheese) to thicken the sauce as needed.

Add minced Garlic ( whole clove)

Add Basil 2 Tablespoons

Add Italian Seasonings 2 Tablesoons

Bring to a simmer on medium-high heat ( Stir Frequently)

Turn off Heat and let rest on burner for 30-45 minutes

Turn the heat on low to medium and bring to a simmer.

Reduce the heat to low, let it sit/cool for 1-2 hours allow the sauce to set up.

Boil water for pasta

While the water is coming to a boil, cook any bread,( Jalapeño Cheese bread is my Favorite) garlic cheese bread that you want to serve with your dish.   So it's all ready at the same time.

Cook Pasta and drain

Serve Meaty Sauce over pasta and enjoy!!
